Peanut Butter Cup Cookies

I'm not a huge peanut butter fan, but when combined with chocolate in a peanut butter cup, I can get addicted.

In addition to eating them as is, I love to make Peanut Butter Cup Cookies with them, and this is my favorite recipe (from AllRecipes.com).


Peanut Butter Cup Cookies (credit AllRecipes.com)

Ingredients:

  • 1 3/4 c flour
  • 1/2 t salt
  • 1 t baking soda
  • 1/2 c butter, softened
  • 1/2 c white sugar
  • 1/2 c peanut butter
  • 1/2 c packed brown sugar
  • 1 egg, beaten
  • 1 t vanilla extract
  • 2 T milk
  • 40 miniature peanut butter cups, unwrapped
Directions:
  • Preheat oven to 375 degrees F (190 degrees C). Combine the flour, salt and baking soda; set aside.
  • Mix the butter, sugar, peanut butter and brown sugar until fluffy. 
  • Beat in the egg, vanilla and milk. 
  • Add the flour mixture; mix well. 
  • Scoop by teaspoonfuls and place into a prepared mini muffin tin (I used cooking spray).
  • Bake at 375 degrees for approximately 8 minutes. 
  • Remove from oven and immediately press a mini peanut butter cup into each ball. 
  • Cool and carefully remove from pan.
