They are quite easy to make, especially if you use prepackaged mixes. On this particular occasion I used a brownie mix and my favorite chocolate chip cookie recipe.
Brookie Bites
Ingredients:
Brownie:
- 1 box of your favorite brownie mix plus required ingredients. (I used Ghirardelli Triple Chocolate Mix, which required 1 egg, 1/3 c water, 1/3 c oil).
- 1 c butter, softened
- 1/2 c sugar
- 1/2 c firmly packed brown sugar
- 1 large egg
- 1 t vanilla extract
- 2 c flour
- 1/2 t baking soda
- 1/8 t salt
- 2 c chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Spray a mini-muffin tin with cooking spray or use mini-muffin liners.
- Prepare brownie mix as instructed on box.
- Scoop approximately 2 teaspoons of brownie mixture into a mini-muffin tin.
- In a medium bowl combine margarine and sugars until smooth.
- Add in egg and vanilla and mix until well-combined.
- In a separate medium bowl combine flour, baking soda, and salt.
- Add flour mixture slowly into sugar mixture and mix well.
- Fold in chocolate chips.
- Roll dough into balls (approximately 2 teaspoons worth of dough in each ball).
- Place dough balls into brownie mixture.
- Bake for 20-22 minutes.
- Makes approximately 48 brookie bites.
