Once again I found myself with some overripe bananas, so I decided to make Mini Banana Muffins with a Cream Cheese and Crumb Topping using this recipe from Food.com.
Muffin Ingredients:
- 1 1/2 c flour
- 1 t baking soda
- 1 t baking powder
- 1/2 t salt
- 3 bananas, mashed
- 3/4 c sugar
- 1 egg
- 1/3 c butter, melted
- 1 T vanilla extract
- 4 oz cream cheese, softened
- 1/4 c sugar
- 1 egg
- 1/3 c brown sugar
- 1/4 c flour
- 1/2 t ground cinnamon
- 1 T butter, melted
- Preheat oven to 375 degrees.
- Spray mini muffin pan with cooking or baking spray.
- Prepare muffin mix by combining flour, baking soda, baking powder, and salt.
- In a separate bowl, combine the bananas, sugar, egg, melted butter and vanilla extract.
- Combine banana mixture with the flour mixture until just moistened.
- Spoon batter (approximately 2 teaspoonfuls) into prepared muffin cups
- Create the cream cheese topping by mixing together all three ingredients.
- Pour a teaspoonful onto the batter in the muffin cups.
- Create the crumb topping by mixing all 4 ingredients until crumbly.
- Sprinkle mixture over the batter.
- Bake for approximately 10-12 minutes or until a toothpick inserted into the center comes out clean.
