No-Bake Chocolate Oat Bars

I found this No-Bake Chocolate Oat Bars recipe on MoneySavingMom.com.

It's super easy to make, and really delicious - if you like coconut.  I made this for a recent get-together at Nadia's house and there were a lot of leftovers, primarily because it had coconut in it.

I actually like coconut (and so do my kids, who devoured the batch I made them), so if you don't like coconut you can easily leave it out (or perhaps next time I'll make this recipe, which has no coconut).
No-Bake Chocolate Oat Bars (recipe credit MoneySavingMom):

Ingredients:
  • 1 c peanut butter
  • 1/2 c honey
  • 1/2 c coconut oil
  • 2 c old fashioned oats
  • 1 c shredded coconut
  • 2 c semi-sweet chocolate chips 
  • 1 teaspoon vanilla extract
Directions:
  • Melt the peanut butter, honey, and coconut oil over medium-low heat in a saucepan on the stove.
  • Remove from heat once everything is melted and smooth.
  • Stir in oats, coconut, chocolate chips, and vanilla.
  • Mix until chocolate is melted.
  • Pour into parchment-lined 9×13 pan and let cool for about 30 minutes.
  • Refrigerate until hardened.
  • Cut into bars.
