Since I usually make banana bread or banana cake with overripe bananas, I decided to try something different, and I ended up making these Peanut Butter Banana Oat Bars (recipe from Sally's Baking Addiction).
They make a great afterschool snack!
Peanut Butter Oat Bars (recipe credit Sally's Baking Addiction):
Ingredients:
- 2 1/2 c old-fashioned rolled oats
- 1/4 c brown sugar
- 1 t baking powder
- 1/2 t salt
- 2 t cinnamon
- 1 t vanilla extract
- 1/2 c milk
- 1 large egg
- 2 large bananas, mashed
- 1/3 c creamy peanut butter
- 1 c chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Spray 8x8 pan with cooking spray.
- Combine oats, brown sugar, baking powder, salt, and cinnamon in a medium bowl.
- Stir in milk, vanilla, and egg.
- Mix well until evenly combined.
- Stir in mashed bananas, peanut butter, and chocolate chips.
- Pour the mixture into the pan and bake for 20 minutes.
- Let cool before cutting into bars.
