Peanut Butter Banana Oat Bars

I never learn - I buy lots of bananas since everyone in my family loves bananas, but we ALWAYS end up with overripe bananas because we don't eat them fast enough.

Since I usually make banana bread or banana cake with overripe bananas, I decided to try something different, and I ended up making these Peanut Butter Banana Oat Bars (recipe from Sally's Baking Addiction).

They make a great afterschool snack!
Peanut Butter Oat Bars (recipe credit Sally's Baking Addiction):

Ingredients:
  • 2 1/2 c old-fashioned rolled oats 
  • 1/4 c brown sugar
  • 1 t baking powder
  • 1/2 t salt
  • 2 t cinnamon
  • 1 t vanilla extract
  • 1/2 c milk
  • 1 large egg
  • 2 large bananas, mashed
  • 1/3 c creamy peanut butter
  • 1 c chocolate chips

Directions:
  • Preheat oven to 350 degrees. 
  • Spray 8x8 pan with cooking spray.
  • Combine oats, brown sugar, baking powder, salt, and cinnamon in a medium bowl. 
  • Stir in milk, vanilla, and egg.  
  • Mix well until evenly combined. 
  • Stir in mashed bananas, peanut butter, and chocolate chips.
  • Pour the mixture into the pan and bake for 20 minutes.
  • Let cool before cutting into bars.
