It was my first time making mango bread, and I was so happy that everyone in my family really liked it.
Mango Bread (recipe credit Allrecipes):
- 2 c flour
- 2 t baking soda
- 1/2 t salt
- 2 ts ground cinnamon
- 1/2 c butter, softened
- 1/2 c vegetable oil
- 1 1/2 c sugar
- 3 eggs
- 1 t vanilla extract
- 3 c peeled, seeded and chopped mango
- 1/2 cup raisins
- 1/2 cup shredded coconut
Directions:
- Spray two 9x5 inch loaf pans with cooking/baking spray.
- In a large bowl, combine the flour, baking soda, salt, and cinnamon.
- In a separate large bowl, mix the butter, oil and sugar until fluffy.
- Stir in eggs one at a time.
- Stir in vanilla.
- Combine wet mixture with the flour mixture.
- Fold in the mango, raisins, and coconut; do not over mix!
- Let stand for 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for approximately 55 minutes.
EXCELLENT recipe! The only thing I did different was to smash, vs. cubing Mango
