I made mini muffins instead of regular muffins, and they make the perfect afternoon snack!
Mini Blueberry Muffins (recipe credit American Baby Magazine):
Ingredients:
- 2 c flour
- 3/4 c sugar
- 2 1/2 t baking powder
- 1/2 t salt
- 2 eggs
- 3/4 c milk
- 1 stick butter, melted
- 1 c frozen blueberries
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Spray mini muffin tin with cooking spray.
- Combine flour, sugar, baking powder, and salt in a medium bowl.
- In a separate bowl combine eggs, milk, and butter.
- Add wet mixture into flour mixture and stir just until moistened.
- Fold in blueberries.
- Scoop teaspoonfuls of the batter into the muffin tin.
- Bake for approximately 10-12 minutes.
