They freeze well, so I plan to make a double batch next time!

Banana Muffins with Cinnamon-Sugar Topping (adapted from Allrecipes.com):
- 1 1/2 c flour
- 1 t baking soda
- 1 t baking powder
- 1/2 t salt
- 3 bananas, mashed
- 3/4 c sugar
- 1 egg
- 1/3 c butter, melted
- 1/3 c packed brown sugar
- 1/8 t cinnamon
- Preheat oven to 375 degrees F.
- Spray a mini muffin tin with baking/cooking spray.
- In a bowl, combine 1 1/2 cups flour, baking soda, baking powder and salt.
- In another bowl, mix together the bananas, sugar, egg and melted butter.
- Combine the flour and banana mixtures until just moistened.
- Spoon batter into prepared muffin tin.
- In a small bowl, mix together brown sugar and cinnamon.
- Sprinkle topping over muffins.
- Bake in preheated oven for 10 to 12 minutes.
