Banana & PB Pops

When I look online for healthy snack ideas, I often see peanut butter sandwiched between two banana slices.



I thought that was such a cute, simple idea, but then I saw that some people turned the banana & peanut butter sandwiches into banana pops, so I decided to do the same.

After making banana and peanut butter "sandwiches," I stuck lollipop sticks in them and refrigerated them for about 15 minutes.

I then took some melted chocolate (I used about 1 cup chocolate chips + 1 tsp flavorless coconut oil - although in this case regular coconut oil would work well - and microwaved in the oven for 1 minute on 50% power), dipped each banana pop in the chocolate, and then sprinkled shredded coconut over each pop.
Refrigerate for an hour before serving.

They're great frozen too!
