They were sooooo good - chocolaty, peanut buttery, and so rich! YUM!
Peanut Butter Cheesecake Bars (recipe adapted from Brown Eyed Baker):
Ingredients:
Crust:
- 2 c graham cracker crumbs
- 2 T sugar sugar
- ½ cup butter, melted
Cheesecake:
- 16 oz cream cheese
- 1 c sugar
- ½ c creamy peanut butter
- 3 T flour
- 4 eggs
- ½ c milk (I used 2%)
- 1 t vanilla extract
Chocolate Glaze:
- 1 c chocolate chips
- 1½ t flavorless coconut oil
Directions:
- Preheat oven to 350 degrees F.
- Combine the graham cracker crumbs and sugar.
- Stir in the melted butter and combine until crumbs are evenly moistened.
- Press the crumbs onto bottom of prepared 9x13 inch backing pan.
- Bake for 8 to 10 minutes. Set aside.
- While crust is cooling, mix the cream cheese, sugar, peanut butter, and flour in a medium bowl until creamy.
- Add eggs one at a time, mixing well after each egg.
- Add milk and vanilla. Stir until combined.
- Pour cheesecake batter over crust and bake for approximately 40 minutes. Cool in pan on wire rack.
- In a small bowl, microwave the chocolate chips and coconut oil on 50% power for 1 minute. Stir until smooth (if needed, microwave for another 30 seconds on 50% power).
- Pour melted chocolate on cheesecake and spread evenly.
- Refrigerate for at least one hour before cutting into squares.
