Vanilla-Chocolate Pound Cake (credit Woman's Day):
- 3/4 c butter, softened
- 2 1/4 c flour
- 1 1/2 t baking powder
- 1/2 t salt
- 3/4 c sugar
- 4 large eggs
- 2 t vanilla extract
- 3/4 c milk
- 1/4 c hot cocoa mix
- 1 T boiling water
- Heat oven to 325 degrees F.
- Spray a loaf pan with cooking/baking spray.
- In a medium bowl, combine the flour, baking powder, and salt.
- In a separate bowl, beat the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, and then add the vanilla.
- Alternately add the flour mixture and the milk - be careful not to over mix.
- In a small bowl, combine the hot cocoa mix with the boiling water.
- Add 1/2 cup batter and mix to combine.
- Spoon 1/3 of the vanilla batter into the prepared pan and top with small spoonfuls of 1/3 of the chocolate batter.
- Repeat twice, ending with spoonfuls of chocolate.
- Use a butter knife to swirl the mixture.
- Bake for approximately 70 to 75 minutes.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
