Most Chinese restaurants offer Almond Jello (a.k.a. Almond Float, Almond Dofu, Almond Tofu) on their dessert menu. It's the perfect end to a savory Chinese meal.
Did you know that you can make it at home using ingredients you probably already have in your refrigerator and pantry? After I discovered how easy it is to make at home, I will never order it at a restaurant again. The cost of one bowl of almond jello at a restaurant is about as much as the cost of ingredients to make one 9 x 13 pan of almond jello!
Here's what you'll need:
1 box of Knox unflavored gelatin (4 packets)
3 cups of water
2 cups of whole milk
3/4 cup of white sugar
2 1/2 teaspoons almond extract
1 or 2 cans of Fruit Cocktail
9 x 13 pan
Here's what you do:
1) Put 2 cups of cold water in a bowl. Sprinkle 4 envelopes of Knox into the water. Let sit for a few minutes.
2) Bring 1 cup of water to a slight boil. Then turn heat down to medium and stir in the gelatin/water mixture. Add 2 cups whole milk and 3/4 cup of white sugar. Stir until sugar is completely dissolved. Turn off stove and remove from heat.
3) Stir in 2 1/2 tsp almond extract. Pour mixture into greased 9 x 13 pan. Chill in refrigerator for 3-4 hours or overnight.
4) Cut into square pieces, serve with chilled fruit cocktail.
