They were so yummy! They were soft, chewy, and the cinnamon-sugar topping made it absolutely delicious!
Snickerdoodle Blondies (recipe credit Baked by Rachel)
Ingredients:
- 1 c salted butter, softened
- 1 c sugar
- 1 c brown sugar
- 2 eggs
- 1 1/2 t vanilla extract
- 1/2 t salt
- 1 t baking powder
- 1 1/2 t cinnamon
- 2 1/2 c flour
- 1/4 c sugar
- 1 1/2 t cinnamon
Directions:
- Preheat oven to 350°F.
- Line a 9x13 inch baking pan with parchment paper.
- In a medium bowl, mix together the butter, 1 c sugar, and 1 c brown sugar.
- Stir in eggs and vanilla.
- In a separate medium bowl, mix together the flour, cinnamon, baking powder, and salt.
- Combine the flour mixture into the sugar mixture.
- Spread batter evenly into pan.
- Combine 1/4 c sugar and 1 1/2 t cinnamon.
- Sprinkle evenly on batter.
- Bake for approximately 25-30 minutes.
