I doubled the recipe, and the blondies turned out fantastic. They were soft and chewy, and the butterscotch really gave it a nice, distinct flavor.
Butterscotch Blondies (recipe credit Jen's Favorite Cookies)
Ingredients
- 1 c (2 sticks) butter, softened
- 1 c sugar
- 1 c brown sugar
- 2 egg
- 2 t vanilla
- 1 t baking powder
- 2 c flour
- 1 c butterscotch chips
- Preheat oven to 350F.
- Line a 9x13 pan with parchment paper.
- Mix butter, sugar, and brown sugar until light and fluffy.
- Add in eggs and vanilla and stir well.
- In a separate bowl, combine flour and baking powder.
- Pour flour mixture into sugar mixture.
- Fold in butterscotch chips.
- Bake at 350F for 30-35 minutes until brown.
