Seeing so many S'more photos on social media got me craving some, and since I don't have any immediate plans to go camping, I decided to make these S'more Brownie Bars.
They turned out really rich and sweet - instead of a full square I'd eat only 1/2 a square at a time - that's how rich they were. But they were so good! And so easy to make! I used a packaged brownie mix for this recipe since I ran out of cocoa powder to make brownies from scratch, but I'm sure you could easily substitute your favorite brownie recipe (or mix!).
S'mores Brownie Bars
Ingredients
- 1 sleeve graham crackers
- 1 1/2 sticks butter
- 1/4 c sugar
- 1 package brownie mix + oil, egg, water as required per package instructions (I used Ghirardelli Triple Chocolate Brownie Mix, which required 1 egg, 1/3 c oil, 1/3 c water)
- 1/2 of a 10oz package of miniature marshmallows
Directions
- Preheat oven to 325 degrees F (oven temperature will vary based on your brownie mix/recipe)
- Crush graham crackers into crumbs and mix with butter and sugar in a small bowl.
- Press mixture into 9x9 inch parchment-lined pan.
- In a medium bowl combine brownie mix ingredients.
- Pour brownie mix over crust.
- Bake for 45-50 minutes (baking time will depend on your brownie mix/recipe).
- When brownies are done baking, pour marshmallows evenly over top.
- Broil for 2-3 minutes until marshmallows are golden brown - watch carefully because the marshmallows will burn quickly!
