Her original recipe included a Lemon Glaze, but since I didn't have any lemon on hand, I just made a vanilla glaze.
I'm not a big "rolls" fan, but these turned out amazing!
They definitely do not look as pretty as Sally's, but they sure tasted delicious!
Vanilla-Glazed Strawberry Sweet Rolls (recipe adapted from Sally's Baking Addiction)
Ingredients
Filling:
- 1 1/2 c fresh strawberries, chopped
- 1/3 c granulated sugar
- 1 1/2 T cornstarch
- 3 c all-purpose flour, plus extra for dusting
- 3 T sugar
- 1/2 t salt
- 2 1/4 t instant dry yeast (1 standard package)
- 1/2 c water
- 1/4 c milk (I used rice milk)
- 3 T butter
- 1 egg
- 1 c of confectioners' sugar
- 1 t vanilla extract
- 3 T milk (I used rice milk)
Directions
- To make the dough, combine the flour, sugar, salt and yeast.
- In a microwave-safe bowl, heat the water, milk, and butter until the butter is melted (about 45 seconds on high, depending on your microwave).
- Stir the liquid mixture into the flour mixture.
- Mix in the egg.
- Transfer the dough to a lightly floured surface and knead by hand for approximately 3 minutes.
- Form the dough into a ball, and place in a lightly greased bowl.
- Cover bowl with plastic wrap and set aside for about 20 minutes.
- While the dough is rising, make the strawberry filling by heating the strawberries in a small saucepan over medium heat for 6-8 minutes, stirring frequently.
- Add in the sugar and cornstarch, and continue to stir for 2 more minutes.
- Remove saucepan from heat and transfer the filling into a small bowl.
- Chill filling completely before use.
- After the dough has risen for 20 minutes, roll the dough out into an 8"x14" rectangle.
- Spread the chilled strawberry filling on the dough, leaving a 1" border around the edges.
- Roll the dough up tightly along the edge.
- Cut the roll into 1 1/2-inch pieces, arranging them in a 9" round greased baking dish.
- Loosely cover the rolls with plastic wrap and set them in a warm area to rise for 1 to 2 hours.
- Once the rolls have doubled in size, preheat the oven to 375 degrees (F).
- Bake for 15 minutes, then rotate the pan 180 degrees and cover with foil (to prevent extensive browning) and bake for 10 to 15 minutes more.
- While the rolls are baking, make the glaze by combining the confectioners' sugar, vanilla, and milk until smooth.
- Drizzle over the rolls right before serving.
