Vanilla-Glazed Strawberry Sweet Rolls Recipe

With a bunch of strawberries on hand, I was searching for a dessert recipe that incorporates strawberries, and I stumbled upon a Strawberry Sweet Rolls recipe from one of my food blogs, Sally's Baking Addiction.

Her original recipe included a Lemon Glaze, but since I didn't have any lemon on hand, I just made a vanilla glaze.

I'm not a big "rolls" fan, but these turned out amazing!

They definitely do not look as pretty as Sally's, but they sure tasted delicious!

Vanilla-Glazed Strawberry Sweet Rolls (recipe adapted from Sally's Baking Addiction)

Ingredients 

Filling:
  • 1 1/2 c fresh strawberries, chopped
  • 1/3 c granulated sugar
  • 1 1/2 T cornstarch
Dough:
  • 3 c all-purpose flour, plus extra for dusting
  • 3 T sugar
  • 1/2 t salt
  • 2 1/4 t instant dry yeast (1 standard package)
  • 1/2 c water
  • 1/4 c  milk (I used rice milk)
  • 3 T butter
  • 1 egg
Vanilla Glaze:
  • 1 c of confectioners' sugar
  • 1 t vanilla extract
  • 3 T milk (I used rice milk)
Directions
  1. To make the dough, combine the flour, sugar, salt and yeast.
  2. In a microwave-safe bowl, heat the water, milk, and butter until the butter is melted (about 45 seconds on high, depending on your microwave).  
  3. Stir the liquid mixture into the flour mixture. 
  4. Mix in the egg.
  5. Transfer the dough to a lightly floured surface and knead by hand for approximately 3 minutes.
  6. Form the dough into a ball, and place in a lightly greased bowl.
  7. Cover bowl with plastic wrap and set aside for about 20 minutes.  
  8. While the dough is rising, make the strawberry filling by heating the strawberries in a small saucepan over medium heat for 6-8 minutes, stirring frequently.  
  9. Add in the sugar and cornstarch, and continue to stir for 2 more minutes.   
  10. Remove saucepan from heat and transfer the filling into a small bowl. 
  11. Chill filling completely before use.
  12. After the dough has risen for 20 minutes, roll the dough out into an 8"x14" rectangle. 
  13. Spread the chilled strawberry filling on the dough, leaving a 1" border around the edges. 
  14. Roll the dough up tightly along the edge.
  15. Cut the roll into 1 1/2-inch pieces, arranging them in a  9" round greased baking dish. 
  16. Loosely cover the rolls with plastic wrap and set them in a warm area to rise for 1 to 2 hours.
  17. Once the rolls have doubled in size, preheat the oven to 375 degrees (F).
  18. Bake for 15 minutes, then rotate the pan 180 degrees and cover with foil (to prevent extensive browning) and bake for 10 to 15 minutes more.
  19. While the rolls are baking, make the glaze by combining the confectioners' sugar, vanilla, and milk until smooth.
  20. Drizzle over the rolls right before serving.
