I wish my husband would stop requesting the 5 pound bag of baby carrots from Costco. He may have big plans for them, but they just sit in our fridge taking up tons of space until I bake carrot cake muffins with them.
I recently had a baked donut fail so I was looking to redeem myself and found a baked carrot cake donut recipe on line. You can find the recipe here from ihearteating.com. The oats in this recipe give the donuts a heartier texture. I also like this recipe because it makes just 6 donuts.
