Banana Chia Mini Muffins Recipe

After watching a show that praised the benefits of chia seeds, I bought a big bag at a local warehouse club store.

And then I had to look up recipes to incorporate the chia seeds in.

The first recipe I stumbled upon that I had all the ingredients for was this recipe for Banana Chia Seed Bread on Huffpost Taste.


I made mini-muffins instead of bread, and they turned out super delish.  The recipe is now one of my favorite muffin recipes to make. The recipe below makes 4 dozen mini muffins - eat some fresh out of the oven, and freeze the rest!  They make the perfect afterschool snack!


Banana Chia Seed Mini Muffins (adapted from this recipe on Huffpost Taste)

Ingredients:
  • 3 T butter, melted
  • 3 large bananas, mashed
  • 1 large egg
  • ¾ c sugar
  • 2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • ½ t salt
  • 2 T chia seeds
Directions:
  • Heat the oven to 350° F.
  • In a large bowl, mix together the melted butter, mashed bananas, egg, and sugar.
  • In a separate medium bowl, mix together the flour, baking soda, baking powder, salt and chia seeds.
  • Combine the dry and wet ingredients. 
  • Pour the batter into a prepared mini-muffin tin and bake for 11 to 13 minutes.
