Pumpkin Chocolate Chip Cookies Recipe

After I made these Pumpkin Cheesecake Bars, I found myself with some leftover pumpkin, so I decided to make Pumpkin Chocolate Chip Cookies (recipe found on Allrecipes).


The pumpkin made these cookies delightfully soft and chewy - just the way I like them, and the pumpkin flavor was not too overpowering.

Pumpkin Chocolate Chip Cookies (recipe slightly adapted from Allrecipes)

Ingredients
  • 1 c canned pumpkin
  • 1 c sugar
  • 1/2 c vegetable oil
  • 1 egg
  • 2 c flour
  • 2 t baking powder
  • 2 t ground cinnamon
  • 1/2 t salt
  • 1 t baking soda
  • 1 T vanilla extract
  • 2 c chocolate chips
  • 1/2 c chopped walnuts 
Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • Mix together the pumpkin, sugar, vegetable oil, and egg. 
  • In a separate bowl, mix together the flour, baking powder, cinnamon, salt, and baking soda.
  • Combined the flour mixture to pumpkin mixture and mix well.
  • Add the vanilla, chocolate chips and nuts.
  • Drop by spoonfuls on a parchment-lined cookie sheet and bake for approximately 10-12 minutes.
