They're so easy to make, and they're stuffed and topped with all kinds of yummy ingredients!
Cheesy Hasselbacks (recipe slightly adapted from Good Housekeeping):
Ingredients:
- 6 medium russet potatoes
- 3 T olive oil, divided
- sea salt
- cheddar (I used shredded cheddar cheese)
- sour cream
- green onions, chopped
- crumbled bacon
- Thinly slice russet potatoes (without cutting all the way through).
- Brush potatoes with 1 1/2 T olive oil.
- Bake at bake at 425 degrees F for 30 minutes.
- Brush the potatoes with the remaining 1 1/2 T olive oil.
- Sprinkle with sea salt.
- Bake for approximately 30 more minutes.
- Stuff cheddar into each slice.
- Garnish with sour cream, green onions, and bacon.
