Whether you dip them in chocolate or not, the OREO Cheesecake Bars are sooooo yummy!
Chocolate-Covered OREO Cheesecake Bars (recipe slightly adapted from Brown Eyed Baker)
Ingredients:
Crust:
- 20 OREOs, crushed
- 2 T butter, melted
Cheesecake:
- 12 oz cream cheese, softened
- 1 c sugar
- 3 large eggs
- 6 T sour cream
- 1½ t vanilla extract
- 10 OREOs, chopped
Chocolate topping:
- 2 c chocolate chips
- 1 T flavorless coconut oil or Crisco
Directions:
- Preheat oven to 325 degrees F.
- Combine crushed OREOs and butter.
- Press onto bottom of parchment-lined 8x8 baking pan.
- Bake for 10 minutes.
- In a medium bowl, mix cream cheese and sugar until smooth.
- Stir in the eggs, sour cream, and vanilla.
- Fold in the chopped Oreos, then pour the batter over the prepared crust.
- Bake for approximately 40 to 50 minutes.
- Let cool at room temperature, then refrigerate for at least an hour before cutting into bars.
- Heat the chocolate chips and coconut oil in a microwave-safe bowl in the microwave on high for 1 minute (heat for additional 30 minute increments if necessary). Stir until smooth.
- Dip the top of each cheesecake bar into the melted chocolate.
- Refrigerate for at least 15 more minutes before serving.
