Furikake Mahi Mahi

In my quest to cook more fish dishes for the family, I decided to make Furikake Mahi Mahi (based on this recipe on the Hawaiian Electric site).

I love mahi - it's one of my favorite fishes to eat, but I never cooked it before, so I was a little nervous.  But the Furikake Mahi Mahi turned out great, and it's now one of my husband's favorite dishes.

Furikake Mahi Mahi (recipe slightly adapted from Hawaiian Electric)

Ingredients:
  • 2 lb mahi mahi, cut into 4 oz portions
  • 1 egg 
  • 1/4 c water
  • 1/4 c flour
  • 1/4 c cornstarch
  • 1 c furikake
  • 1 c panko 
  • 1/4 c vegetable oil
Directions:
  • Mix egg, water, flour, and cornstarch in a shallow dish.
  • Mix together furikake and panko in a separate shallow dish.
  • Dip fish pieces into egg mixture, then furikake mixture.
  • Fry fish pieces in oil on medium-high heat until golden brown on each side.
