I used them for the crust, and also as a topping/garnish.
The cheesecake bars turned out fantastic - rich and creamy, with a light, lemony flavor.
Lemon Cheesecake Bars
Ingredients:
- 1 sleeve of Trader Joes Meyer Lemon Cookie Thins, crushed
- 2 T butter, melted
- 2 8 oz pkg cream cheese, softened
- 1/2 c sugar
- 1 T lemon juice
- 1/2 t vanilla extract
- 2 eggs
- 10 Trader Joes Meyer Lemon Cookie Thins, crumbled
Directions:
- Heat oven to 350°F.
- Combine cookie crumbs and butter in a small bowl.
- Press into bottom of parchment-lined 8x8 square pan and bake for 6 minutes.
- In a separate medium bowl, mix together the cream cheese, sugar, lemon juice, and vanilla.
- Beat in eggs.
- Pour cream cheese mixture over crust.
- Bake for approximately 20 to 25 minutes.
- Sprinkle/garnish with cookie crumbs.
