Lemon-Parsley Baked Cod

In my efforts to make more fish for the family, we bought some frozen cod from our local warehouse club.

Then the search went on for a quick and easy recipe, and I found this recipe from Taste of Home.

I added a few more minutes to the cooking time since I didn't defrost the cod, and it turned out delicious!

Definitely will make it again soon!

Baked Cod (recipe credit Taste of Home)

Ingredients:
  • 3 T lemon juice
  • 3 T butter, melted
  • 1/4 c flour
  • 1/2 t salt
  • 1/4 t paprika
  • 1/4 t lemon pepper
  • 4 cod fillets (6 oz each)
  • 2 T parsley, chopped
Directions:
  • Preheat oven to 400°F. 
  • In a shallow dish, combine the lemon juice and butter. 
  • In a separate shallow dish, combine the flour, salt, paprika, and lemon pepper.
  • Dip cod fillets in lemon juice mixture, then in flour mixture to coat both sides.  Be sure to shake off any excess.
  • Place cod in a prepared 13x9-in. baking dish.
  • Drizzle cod with remaining lemon juice mixture. 
  • Bake 12-15 minutes (if frozen add 5 to 10 minutes cooking time).
  • Sprinkle parsley over fish.
