You can make them with or without the granola, but I like them much better with the granola!
Granola-Topped Strawberry Mini Muffins (recipe slightly adapted from Allrecipes)
Ingredients:
- 1/4 c vegetable oil
- 1/2 c milk (I used rice milk)
- 1 egg
- 1/2 t salt
- 2 t baking powder
- 1/2 c sugar
- 1 3/4 c flour
- 1 c strawberries, chopped
- granola
Directions:
- Preheat oven to 375 degrees F.
- In a small bowl, combine oil, milk, and egg.
- In a separate medium bowl, combine flour, salt, baking powder and sugar.
- Add strawberries and toss to coat.
- Pour in milk mixture and combine well.
- Pour batter in mini muffin tin.
- Sprinkle with granola.
- Bake for 10 minutes.
