I don't know why, but I never thought to eat quinoa for breakfast until recently. I've seen a lot of quinoa breakfast bowls online - mostly sweet ones, but since I am a fan of savory foods for breakfast, I decided to make a savory Quinoa Breakfast Bowl.
All I did was take a 2 cups of quinoa and sauteed it in some olive oil for a few minutes with some chopped onions (about 1/2 c - I love onions!), and minced garlic (1 clove).
I then divided the quinoa into two bowls and topped with bacon, eggs, avocado, tomato, cheddar cheese, and green onions.
You could really add anything you wish - mushrooms, ham, Portuguese sausage, or even SPAM.
It's a great, delicious way to use up leftover quinoa!
