I actually adapted the recipe quite a bit, using what I had on hand. I also fried the chicken instead of baking them, and served it with a homemade honey mustard sauce and some rice instead of on greens. I know, not the healthiest, but the chicken sure tasted good!
Chia-Crusted Chicken (recipe adapted from SELF)
Ingredients:
- 8 chicken tenderloins
- 2 T flour
- 1/2 t salt
- 1/2 t pepper
- 1 egg
- 2 t Dijon mustard
- 2 T chia seeds
- 3/4 c panko
- Toss chicken tenders in flour, salt, and pepper.
- In a medium bowl, mix egg and Dijon mustard.
- In a separate medium bowl, combine chia seeds and panko.
- Dip each chicken tender in egg and then panko mixture.
- Pan fry chicken on medium-high heat until golden brown on each side and cooked all the way through (about 5-7 minutes each side).
- Serve as is or with honey mustard sauce.
