Chia-Crusted Chicken

I love finding new recipes using chia, and when I saw this Chia-Crusted Chicken recipe in SELF magazine, I knew I wanted to give it a try.


I actually adapted the recipe quite a bit, using what I had on hand.  I also fried the chicken instead of baking them, and served it with a homemade honey mustard sauce and some rice instead of on greens.  I know, not the healthiest, but the chicken sure tasted good!

Chia-Crusted Chicken (recipe adapted from SELF)

Ingredients:
  • 8 chicken tenderloins
  • 2 T flour
  • 1/2 t salt
  • 1/2 t pepper
  • 1 egg
  • 2 t Dijon mustard
  • 2 T chia seeds
  • 3/4 c panko
Directions:
  • Toss chicken tenders in flour, salt, and pepper.
  • In a medium bowl, mix egg and Dijon mustard. 
  • In a separate medium bowl, combine chia seeds and panko.
  • Dip each chicken tender in egg and then panko mixture.
  • Pan fry chicken on medium-high heat until golden brown on each side and cooked all the way through (about 5-7 minutes each side). 
  • Serve as is or with honey mustard sauce.
