I adapted this recipe from Allrecipes.com for the Garlic Shrimp, stuffed the shrimp into an avocado, and drizzled on some Sriracha chili mayo.
My kids ate the shrimp as is - not in the avocado and without the chili mayo sauce.
Either way, it's a quick, easy, and delicious meal!
Garlic Shrimp-Stuffed Avocados (Garlic Shrimp recipe adapted from Allrecipes)
Ingredients:
- 1 1/2 T olive oil
- 1 lb shrimp, peeled and deveined
- salt
- 6 cloves garlic, finely minced
- 3 T lemon juice
- 2 T cold butter
- chopped parsley
- halved avocados, peeled and pitted
- Sriracha chili mayo (optional)
- Heat olive oil in pan on medium-high heat.
- Cook shrimp for about a minute.
- Season with salt, and cook and stir for another minute.
- Stir in garlic, lemon juice, and butter.
- Cook for an additional 2 - 4 minutes, until shrimp is pink and opaque.
- Place cooked shrimp into avocado shells.
- Sprinkle with parsley.
- Drizzle with chili mayo.
