A friend of mine recently posted a picture of spinach muffins on Instagram, and she sent me the recipe from Green Forks so I could give it a try too.
I could taste the spinach, but my kids could not. My friend called them "Hulk" muffins, so I called them that too since my kids love all things Marvel. They loved the muffins!
Although I slipped a couple times saying they were "spinach muffins," I don't dare tell the kids that spinach is inside the Hulk muffins.
They taste like bananas, are really delicious, and they make a great afterschool snack!
Spinach Banana Muffins (recipe slightly adapted from Green Forks)
Ingredients:
- 2 c flour
- ¾ c sugar
- 2 t baking powder
- ½ t baking soda
- 1½ t ground cinnamon
- ½ t salt
- ¼ c vegetable oil
- ¾ c milk (I used rice milk)
- 1 c fresh spinach
- 3 bananas
- 2 t pure vanilla extract
- Preheat oven to 350°F.
- Combine flour, sugar, baking powder, baking soda, cinnamon, and salt in a medium bowl.
- In a blender, combine oil, milk, spinach, bananas, and vanilla until pureed.
- Pour puréed mixture into dry mixture and combine.
- Fill prepared muffin cups about ⅔ full and bake 18-20 minutes (9-11 minutes for mini muffins).
