They were so yummy! Not only did I eat them for dessert, but I even ate them for breakfast!
Blueberry Crumble Bars (recipe credit Love Bakes Good Cakes)
Ingredients:
- ½ c sugar
- ½ c brown sugar
- 1 t. baking powder
- 3 c flour
- 1 c butter
- 1 egg
- ½ t vanilla
- 4 c fresh blueberries (I used 2 c)
- ½ c sugar
- 3 t cornstarch
Directions:
- Preheat oven to 375°F.
- Combine 1/2 c sugar, brown sugar, baking powder, and flour in a medium bowl.
- Cut in butter.
- Stir in egg and vanilla until mixture is crumbly.
- Pat half of the mixture into the bottom of a parchment-lined 9x13 pan.
- In another medium bowl, combine the blueberries, 1/2 c sugar, and cornstarch.
- Sprinkle the blueberry mixture over crust.
- Sprinkle remaining crumb mixture on top of blueberries.
- Bake for 45 minutes or until the top is lightly browned.
- Cool completely before cutting into squares.
