This recipe is very versatile, and it's a great way to used up leftover mashed potatoes!
Potato Pancakes
Ingredients:
- 4 medium-sized potatoes, peeled, boiled, and mashed
- 1 cup shredded, cooked chicken
- 2 eggs
- 1/2 c panko
- salt
- pepper
- oil for frying
- chopped scallions & sour cream for garnish (optional)
- Combine mashed potatoes, chicken, eggs, panko, salt, and pepper in a medium bowl.
- Form patties and pan-fry patties in 2 T oil, approximately 3-5 minutes each side, or until golden brown.
- Top with chopped scallions and sour cream!
