I was the lucky recipient of two perfect avocados from my friend's perfect avocado tree. Even luckier was that I was the only one in my family of four that loves avocado. I'm not even embellishing when I say that 2 household members will not even try avocado and one of those members is not a child.
So I gleefully devoured the first avocado by myself. It was creamy, buttery, delicious and perfect. I knew avocados were healthy and loaded with healthy fats so I started googling avocado dessert recipes in an effort to get my family on the avocado train.
I found a Chocolate Peanut Butter Avocado Pudding recipe from The Minimalist Baker, who I had just started following on Instagram! She creates simple, delicious recipes that use 10 ingredients or less, one bowl, or 30 minutes or less to prepare. You can find the recipe here.
My mixture was too thick for my blender so my pudding was not as smooth in texture, but was still delicious. I wish I had used a better cocoa powder because the flavor stood out, but I tried to offset it by adding some melted chocolate chips.
My kids had no idea there was avocado in the pudding. In fact, one of them only tasted the banana. I'm still amazed by this delicious avocado treat!
