Cranberry Cream Cheese Bars Recipe



It's been a long while since I made Cranberry Cream Cheese Bars.  At one point in time, I'd make them multiple times a year for gatherings.

I just bought some cranberry sauce, and I plan on making them again soon.

It's the perfect recipe for the upcoming holidays!

Cranberry Cream Cheese Bars


Ingredients
  • 2 c flour
  • 1 1/2 c rolled oats
  • 3/4 c plus 1 T firmly packed brown sugar
  • 1 c butter, softened
  • 1 (8 oz.) pkg cream cheese, softened
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 1/4 c lemon juice
  • 2 T cornstarch
  • 1 (16 oz.) can whole berry cranberry sauce
Directions:
  • Preheat oven to 350°F. 
  • Mix together the flour, oats, 3/4 cup brown sugar and butter in large bowl until coarse crumbs are formed. 
  • Reserve 1 1/2 cups of the crumb mixture; press remainder firmly onto bottom of prepared 9x13 pan.
  • Bake 15 minutes.
  • Meanwhile, mix together the cream cheese and sweetened condensed milk until smooth.  
  • Stir in lemon juice. 
  • Spread cream cheese mixture over partially baked crust.
  • Combine remaining 1 tablespoon brown sugar and cornstarch in small bowl; stir in cranberry sauce. 
  • Spread evenly over cream cheese layer. 
  • Top with reserved crumb mixture.
  • Bake 40 minutes or until golden brown.
  • Cool completely before cutting into bars.
