Tsujita Hawaii

Tsujita, a wildly popular Japanese noodle house in Japan and Los Angeles, is now open at Waikiki Yokocho Gourmet Alley.  Tsujita is known for their tonkotsu style broth that is simmered for over 60 hours.  It's thick, flavorful, and highly addicting.

Tsujita offers both ramen and tsukemen, and between the two, you'll definitely want to go for the tsukemen, where the noodles and soup are presented separately.

Dip the noodles, which are thick and chewy, into the rich tonkotsu broth, and slurp.

After you're done with your noodles (but not the broth), ask your server for the wari to dilute your dipping broth, and then drink it directly from the bowl.  Delicious.

Don't forget to order a side of gyoza to complement your meal.
