My husband was on his way to Don Quiote so I asked him to pick up mochiko if it was on sale. It was and now I was the proud owner of 5 additional boxes. Not liking such a large inventory, I searched the internet for recipes.
I came upon a pretty simple one from Chew Out Loud that looked really delicious. Just mix one box of mochiko with one cup of white sugar, 3 eggs, 2 cups whole milk (I used 1%), 1 cup vegetable oil, and 2 teaspoons vanilla extract.
Pour into a greased 9x13 pan and spoon in 18 ounces of koshian - smooth sweetened red bean paste - throughout the pan. Bake at 350 degrees for one hour. Of course, after it was in the oven, I realized that I used tsubushian, mashed red bean paste, instead of the smooth one. Luckily, it still came out delicious! This recipe is an easy one and definitely a keeper!
