Chef Simeon Hall, Jr. at La Hiki Kitchen

I recently had the privilege of attending a special media event at the Four Seasons Resort Oahu at Ko Olina to meet Chef Simeon Hall, Jr. of La Hiki Kitchen.  He arrived to the island in November, and just last month launched a new menu at La Hiki Kitchen.
At the intimate, interactive event, guests were able to learn about Chef Simeon's "island to table" philosophy.
Tartine
With a goal of sourcing at least 65 percent of his menu from local producers, such as Kahumana Farm and Pono Pork, Chef Simeon's dishes allow local ingredients to shine.

His Carrots and Barley dish, which was a Daily Island to Table Chef's Special, is an example of how he utilizes the bounty that is given to him.  It's not about only using the perfect produce, or only a certain type of ingredient.  To him, working harmoniously with the farms and producers means collaborating in a synergistic partnership to use what's available, not what's expected.  The result is a win for all involved - the restaurant, the suppliers, and the guests who dine at La Hiki Kitchen.

Whether it's a tartine made with housemade cheese, or the most amazing carrot dish ever, Chef Simeon has the ability to take simple ingredients and elevate them in unexpected ways.
Coconut Gelato

Tuna Nicoise with Tapioca Chip
The pleasing Tuna Nicoise was garnished with a Tapioca Chip.  This surprising component worked well (I actually wished I could eat an entire bag of the housemade Tapioca Chips).
Treacle Tart
The Treacle Tart (aka Crack Pie), was indeed addicting.  Chef Simeon likened it to a pecan pie without the pecans. 

Chef Simeon has achieved celebrity status throughout the Bahamas and the Caribbean, and credits his grandmothers as his biggest culinary inspirations. His island influences and emphasis on sustainability translate seamlessly to his cuisine at La Hiki Kitchen. I can't wait to try out more of the menu!
