Whether you eat it for breakfast, dessert, with ice cream, or without, it's quite yummy! A great way to use up blueberries and bananas!
Blueberry Banana Oatmeal Bake
Ingredients:
- 3 medium bananas, sliced into 1/2″ pieces
- 1 1/2 c blueberries
- 1/4 c honey
- 1 c uncooked quick oats
- 1/4 c chopped walnuts
- 1/2 t baking powder
- 3/4 t cinnamon
- 1 c soy milk
- 1 egg
- 1 t vanilla extract
- Preheat the oven to 375° F.
- Arrange the banana slices into a single layer on the bottom of prepared 8x8 or 9x9 baking dish.
- Sprinkle half of the blueberries over the bananas, 1/4 tsp of the cinnamon, and 1 tbsp of the honey.
- Cover with foil and bake for 15 minutes.
- In a medium bowl, combine the oats, half of nuts, baking powder, and remaining cinnamon.
- In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.
- Pour oat mixture over the bananas and blueberries once done baking.
- Pour milk mixture evenly over the oats.
- Sprinkle remaining blueberries and walnuts on top.
- Bake for 30 minutes.
