Ingredients:
- 1 1/2 c flour
- 2 t cinnamon
- 1/2 t baking soda
- 2/3 c sugar
- 3 T coconut oil, melted and cooled to room temp
- 1/2 c + 2 T plain yogurt
- 2 large eggs
- 1 t pure vanilla extract
- 1 1/2 c diced strawberries
- strawberry slices to garnish (optional)
- 1/2 c powdered sugar
- 1/2 t pure vanilla extract
- 1 T milk
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- In a medium bowl, combine the flour, cinnamon, salt, and baking soda.
- In a separate bowl, mix together the sugar, coconut oil, yogurt, eggs, and vanilla.
- Combine the wet ingredients and dry ingredients. Do not over-mix.
- Fold in diced strawberries.
- Pour mixture into prepared 8x4 loaf pan.
- Place sliced strawberries on top of batter (optional).
- Bake for 45 to 55 minutes.
- Make the vanilla glaze by whisking 1/2 c powdered sugar, 1/2 t vanilla, 1 T milk.
- Drizzle over baked bread.
