Lunch at Nico's Pier 38

Although I've been to Nico's Pier 38 for breakfast and dinner in recent years, it's been over a decade since I've gone for lunch.

A lot of the same items are served for both dinner and lunch, but lunch is a lot more casual, as you place your order at the counter and find a seat, and you pick up your food in disposable containers.

Ginger Lemongrass Panko Crusted Mahi Mahi Salad

All of the food was really good.  I had one of the specials of the day - a Ginger Lemongrass Panko Crusted Mahi Mahi Salad.  The flavors of the ginger and lemongrass were mild, which I liked.

The Orange Chicken had a spicy orange sweet chili sauce that was a tad too spicy for one of my kids, but it was still really good.

The Double Cheeseburger came with fries (you could also opt for a salad), and it was huge!

I was really good and didn't get tempted by any of the tantalizing desserts, but there's always next time!

Visit Denver: Little Man Ice Cream


37-degree weather did not deter us from going to Little Man Ice Cream on our first day in Denver.

Named after the founder's father, who was small in stature, but big in heart, the cute ice cream shop is based in a gigantic cream can!

I ordered the Colorado Avalanche - blue mint ice cream with dark and white chocolate chips.  It sure was yummy!

The Purple Cow was a black raspberry base ice cream with dark and white chocolate chips.

Little Man Ice Cream's hand-crafted confections are sure to please no matter what the weather!

Salted Caramel Pretzel Bark

I love making bark.  It's super easy to make, and super yummy too!

I make it for all sorts of holidays and I usually use whatever I can find in the pantry - sprinkles, peanut butter, cookie butter, candies, etc.

A recent last-minute get-together resulted in Salted Caramel Pretzel Bark.

I used Sea Salted Caramels I bought in Wyoming and mini bags of pretzels we had on hand.

Simply place a layer of graham crackers on a parchment-lined cookie sheet, spread melted chocolate all over the graham crackers (I used 1 cup chocolate chips melted on high in the microwave for 1 minute), swirl the caramel into the chocolate (I melted 2 large caramel pieces - about 1/4 c worth; 30 seconds on high in the microwave), and sprinkled on pretzel pieces.

Refrigerate for at least 30 minutes before breaking the bark into pieces
I absolutely loved the sweet / salty combo!

Visit Denver: The Buckhorn Exchange

Even though we just had a huge, late breakfast, and indulged in some delicious ice cream, our family had to make a stop at The Buckhorn Exchange, which is Denver's oldest restaurant.

Why did we want to go there?  To try Rocky Mountain Oysters and Rattlesnake!

I enjoyed the Rattlesnake, which was smoked and topped a chipotle cream cheese dip.  Eaten with the dip, the rattlesnake was actually really good.  It wasn't difficult to eat at all.

However, I thought the Rocky Mountain Oysters were difficult to eat.

It was probably more of a "mind over matter" thing, but I could only eat half of one.  Even drenched in cocktail sauce or horseradish - I just couldn't get my mind off of what I was really eating (if you don't know what Rocky Mountain Oysters are, google it!).

The Bean Soup was satisfying (made from "Buckhorn's famous Old West recipe according to the menu).

The service was great, and you'll find lots of taxidermied animals just about everywhere you look in the restaurant, which makes The Buckhorn Exchange a very interesting place to eat at.

Recently opened in Kalihi is Olena by Chef Ron Simon.

My husband ordered take-out since he was in the area.  I opted for the Mac & Cheese and Red Wine Stew.  I really only wanted the stew, and it sure was delish.  The stew was flavorful, and the beef and veggies were tender.

The Poke Bowl included ahi poke, avocado, ocean salad, pickled ginger, ogo, cucumber, shoyu, sesame oil, Srirarcha, and chili oil over your choice of rice or greens.

We ordered the Trio Sampler and made it a combo by adding on Truffle Fries.  The sampler consisted of the following sliders: Pulled Pork, Slow Braised Beef Brisket, Adobo Oink & Moo.


Olena offers a variety of baked goods, and we decided to try the Banana-Poi Bread.  It was moist and yummy!

Service there was so friendly, and I look forward to ordering food from Olena again soon.

Easy Energy Bar Recipe


  


Ingredients:

(1) cup Creamy Peanut Butter
(2) bags of mini marshmallows
(1) stick of unsalted butter
(10) cups of Rice Krispies cereal
(1) cup of diced dried apricots (Mediterranean works best)
(2) cups of cranberries
(1) cup dry peanuts
(1) cup Quaker Oats quick 1-minute oats


Preheat oven to 300 degrees. Coat a large roasting pan with oil spray, and add the Rice Krispies, Quaker oats, apricots, cranberries, and peanuts. Toast in the oven for 3-5 minutes at 300 degrees.

While the cereal mixture is toasting, slowly melt the butter in a large sauce pan, then add the marshmallows and peanut butter and mix over low heat until smooth.



Remove the mixture from the oven, and then pour the butter/PB/marshmallow mixture over the cereal mixture and mix thoroughly.  The marshmallow mixture gets thick and sticky very quickly, so you'll need to mix quickly and use a lot of elbow grease so that the cereal mixture is evenly coated.

Transfer everything to another large prepared roasting pan (that has been sprayed with cooking spray) and press firmly using a prepared wooden spatula or wax paper.  



Allow to cool, then cut into rectangles or squares with a greased knife. 



You can tweak the recipe to your liking, such as adding raisins, sunflower seeds, or other types of dried fruit.

Visit Colorado: Gray's Coors Tavern

On our drive from Colorado to New Mexico, we stopped at Gray's Coors Tavern in Pueblo, CO for lunch.

Gray's Coors Tavern offers all sorts of yummy bar eats, but a must-try is the Slopper.


Regular Slopper
The Regular Slopper consists of 2 hamburger patties smothered in red chili and topped with onions and cheese.  It initially reminded me of loco moco, minus the egg, or even hamburger steak!

Some people get it with fries on it as well (we just ordered it on the side).

It's really delicious, comfort-style food.

All of the other typical bar-style eats we ordered were all good and satisfying.

Every Friday they give out free cookies from a local bakery.

Gray's Coors Tavern was a great stop for food, and service was excellent (our server even gave us stickers!).

Recently-Opened in Mililani: Shabu.com


Shabu.com recently opened in the Town Center of Mililani.  I'm not a huge fan of shabu shabu or nabe, so fortunately there were many other items on the menu to choose from, such as donburi sets and a variety of appetizers.

The Lunch Set Special (served daily 11am-2pm) is just $13.99 and includes a meat and veggie set with noodles and rice.





The tables have cooktops embedded, but parents with little kids need not worry about the burners - even when turned "on," the burners do not heat up until pots are actually placed on them.

Donburi Sets ($11.50) include noodles with Shabu.com broth, veggies, and choice of protein.

Throughout the restaurant is a conveyor belt where you can select additional ingredients ($2.50/per plate) to add to your pot.


A server will come around with a sauce cart, customizing sauces to your liking.
I thought the food was really good (I especially liked the chicken and gyoza), and the prices were very reasonable.  The servers were all super friendly and helpful.  I would definitely revisit!
