Baked Oatmeal Bars

We've had oatmeal in the pantry for a while now, so I decided to use some up by making Baked Oatmeal Bars.

The recipe is very versatile - I made a batch with chocolate chips and shredded coconut, and another with dried cranberries.

The kids eat them for breakfast and snack!

Baked Oatmeal Bars

Ingredients:
  • 2 c old-fashioned rolled oats
  • 1/3 c packed brown sugar
  • 1 T sugar
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 1/2 t ground cinnamon
  • 1 c milk
  • 2 eggs
  • 2 T vegetable oil
  • 1 t vanilla extract
  • 1 to 1 1/2 c total of your favorite mix-ins (chocolate chips, dried cranberries, shredded coconut, etc.).
Directions:
  • Preheat oven to 350 degrees F.
  • Mix together the oats, sugars, baking powder, salt, and cinnamon together in a bowl. 
  • In a separate bowl, whisk the milk, eggs, vegetable oil, and vanilla extract together. 
  • Stir egg mixture into oats mixture.
  • Stir in mix-ins until well combined and set aside for about 20 minutes. 
  • Bake in prepared 8x8 pan for approximately 30 minutes.
