Buddha Bowls

In an effort to try and get my kids (and myself!) to eat more veggies, I've been trying "customizable" meals, where they are free to add whatever produce they want.

From tacos to omelets, it seems like when they can add the toppings or fillings of their choosing, they are more likely to eat or try new veggies.

Recently I made Buddha Bowls with a quinoa base.  I had all sorts of veggies from a recent farmers market trip, as well as some canned from the pantry.

We had carrots, radishes, cabbage, red onions, soy beans, corn, garbanzo beans, tomatoes, olives, and snap peas.  It was quite a colorful mix! 

You can really add anything you want on top of the quinoa (Buddha Bowls are a great way to use up leftover veggies or ones that are about to go bad).

As for the dressing - you can make your own, or sometimes I simply drizzle a little balsamic + EVOO, or use whatever bottled dressing I have in the fridge (again, I let my kids pick so they are more likely to eat whatever is in their bowl).

I found one of my recent faves to be Flavors of Kauai's Original Flavor-Burst Dressing & Sauce, which has a nice shoyu / sesame oil flavor.

Buddha Bowls are a tasty and easy way to incorporate more veggies into the family's diet!
