Lemon Blueberry Bread

For some reason, whenever we have fresh blueberries in the house, no one eats them unless I bake with them.

So once again, I found myself searching for a recipe to incorporate blueberries in, and found Lemon Blueberry Bread.

I made several tweaks to the recipe I found (eg used soy milk vs yogurt), but the end result was still a moist, yet fluffy bread. 

The lemon flavor was very subtle, but the bread overall was just so yummy. 

Lemon Blueberry Bread

Ingredients
  • 2 c flour
  • 1 ½ t baking powder
  • ½ t salt
  • 1 stick butter, softened
  • 1 c sugar
  • 2 eggs
  • 2 c fresh blueberries
  • 2 tsp lemon juice
  • 1/4 c almond milk
Directions
  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium bowl, whisk together flour, baking powder, and salt. 
  • Add the blueberries and lemon juice; toss to combine.
  • Cream together the butter and sugar until light and fluffy. 
  • Stir in eggs and milk.  
  • Mix in dry ingredients.
  • Pour batter into prepared loaf pan and bake for 70 minutes.
