I decided to clean out the pantry one day, and I ended up making Salted Caramel + Chocolate Pudding Cookies!
I used caramels I bought on a trip to make a typical pudding cookie a little more special. I only had regular pudding on hand, not instant, but you could use either type. The cookies turned out to be so good!
Salted Caramel + Chocolate Pudding Cookies
Ingredients:
- 1/2 c butter, softened
- 3/4 c brown sugar, packed
- 1 t vanilla extract
- 1 egg
- 1 5 oz box chocolate pudding mix
- 1/2 t baking soda
- 1/4 t salt
- 1 1/4 c four
- 1 c chocolate chips
- 1 c salted caramel pieces
- Cream butter and brown sugar in a medium bowl.
- Mix in egg and vanilla.
- Stir in pudding mix, baking soda, and salt.
- Mix in flour.
- Stir in chocolate chips and salted caramel pieces.
- Chill dough for at least an hour.
- Preheat oven to 350°F.
- Roll dough into balls and bake on parchment-lined baking sheet for 9-11 minutes.
