I think it's my new favorite cookie!
I just loved the cheesecake center - it makes the cookie all the more decadent!
I eat the cookies chilled, but you can also warm them up in the microwave for a few seconds. Delish!
Cheesecake-Stuffed Chocolate Chip Cookies
Ingredients:
- 8 oz cream cheese, softened
- 1/2 c powdered sugar
- 1 c butter, softened
- 1 c brown sugar
- 1/4 c sugar
- 2 eggs
- 2 t vanilla
- 1 t baking soda
- 1 t kosher salt
- 2 1/2 c flour
- 2 c chocolate chips
- Create the cheesecake filling by mixing the cream cheese and powdered sugar until smooth. Refrigerate while making the cookie dough.
- Mix butter and sugars until creamy.
- Mix in eggs, vanilla, and baking soda.
- Add in flour until just combined.
- Mix in chocolate chips.
- Scoop 2 tablespoonfuls of dough, roll into balls, and flatten.
- Scoop 2 tablespoonfuls of the cream cheese mixture and place on a circle of dough. Place another circle of dough on top the cream cheese mixture, and form one giant ball around the cream cheese.
- Place on parchment-lined cookie sheet and bake for 375 degrees Fahrenheit for 10 minutes.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
