Skillet Cookie

I bought a mini cast iron skillet with the intention of using it for desserts.  I never used it.  I did, however, use a 12" skillet for the first time to make a Skillet Cookie.

The original recipe stated to mix the ingredients in the pan and chill part of the recipe, but I instead mixed the ingredients in a separate bowl, and skipped the chilling completely.

The end result was still an amazing cookie!

I imagine you can take nearly any favorite chocolate chip cookie recipe and simply place the dough in a cast iron skillet to make one gigantic cookie. 

Skillet Cookie

Ingredients:
  • 1 c butter, softened
  • 1 c brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 1 t vanilla
  • 2 c + 2 T flour
  • 1 t baking soda 
  • 2 c chocolate chips

Directions:
  • Preheat oven to 325 degrees Fahrenheit.
  • Combine the sugars and butter until creamy.
  • Mix in eggs and vanilla.
  • Stir in flour and baking soda.
  • Mix in chocolate chips.
  • Pour dough into 12-inch cast iron skillet.  
  • Bake at 325 degrees for approximately 30 minutes. 
Eat as is, or top with ice cream!
