They were so delish! I definitely want to try and add bacon next time!
Cheddar and Tomato Muffins
Ingredients:
- 2 c flour
- 1 T baking powder
- 1 T sugar
- 1 t salt
- 1 large egg, beaten
- 1 c milk
- 1/4 c oil
- 1 c shredded cheddar cheese
- 1/2 cup grape tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- Preheat the oven to 350° F
- Mix together the flour, baking powder, salt and sugar in a large bowl.
- In a medium bowl, mix the egg, milk, and oil together.
- Add the egg mixture to the flour mixture. Mix just enough to moisten.
- Fold in cheddar cheese and tomatoes.
- Fill muffin cups 2/3 full. (Add a half grape tomato on top if you wish).
- Sprinkle tops with grated Parmesan.
- Bake 18-20 minutes.
