Chicken and Green Beans


This Chicken and Green Beans dish is another quick and easy meal!

If you have teriyaki sauce on hand, it will be even easier, but this recipe requires just a few basic ingredients, and it was very tasty.  Everyone in the family enjoyed it!


Chicken and Green Beans

Ingredients:
  • 2 T vegetable oil, divided
  • 2 1/2 c green beans trimmed and cut into 1 inch pieces
  • 1 lb boneless skinless chicken thighs cut into 1 inch pieces
  • 2 t minced garlic
  • 1/4 c + 1 T water, divided
  • 1/4 c soy sauce
  • 3 T honey
  • 2 T flour
  • salt and pepper to taste

Directions:
  • Heat 1 T oil in a large pan over medium heat.
  • Add beans and cook for approximately 3-4 minutes.
  • Remove the green beans from the pan and place in a bowl.
  • Add the remaining 1 T of oil.
  • Add chicken to pan; season with salt and pepper, and cook on medium-high for 5-7 minutes, stirring occasionally, until chicken is cooked through.
  • Add garlic and cook for 30 seconds.
  • Add green beans and cook for 2 more minutes.
  • Meanwhile, in a separate bowl, whisk together the 1/4 c water, honey, and soy sauce. 
  • In a separate small bowl, mix together the flour and 1 T of cold water.
  • Pour soy sauce mixture over chicken and green beans; cook for 1 minute.  
  • Whisk in flour mixture and bring to a boil; cook for another minute or until sauce has thickened.  Whisk in the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken, stirring constantly.
