After searching for recipes that use butterscotch, I decided to try Oatmeal Butterscotch Cookies.
They were really sweet and tasty! The cookies were on the chewier side, which I liked. If you love butterscotch, you'll have to try this recipe!
Oatmeal Butterscotch Cookies
Ingredients:
- ¾ c butter, softened
- ¾ c sugar
- ¾ c packed brown sugar
- 2 eggs
- 1 t vanilla extract
- 1 ¼ c flour
- 1 t baking soda
- ½ t ground cinnamon
- 3 c rolled oats
- 2 c butterscotch chips
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl mix together the butter and sugar until creamy.
- Mix in eggs and vanilla.
- In a separate bowl, mix together the flour, baking soda, and cinnamon.
- Mix the flour mixture into the butter mixture.
- Stir in chocolate chips.
- Drop by teaspoonfuls onto parchment-lined baking sheets.
- Bake for 8-10 minutes.
